Hi all,
Vanilla are planning an update to the site on April 24th (next Wednesday). It is a major PHP8 update which is expected to boost performance across the site. The site will be down from 7pm and it is expected to take about an hour to complete. We appreciate your patience during the update.

Anyone ever had a go at making their own seitan?

    Came across this video of an Irish chap, the stuff he makes looks incredible, way better than anything you'd buy in a shop.

    Seems a bit labour-intensive to do on a regular basis, but I was surprised that it was possible to make such a convincing meat substitute from so few ingredients.

    I make/made it a lot, you can make really simple versions and more complex ones. A nice basic starter one that is http://yeahthatvegan****.blogspot.com/2007/04/infamous-seitan-recipe-o-greatness.html

    There is a seitan appreciation society on facebook with incredible recipes.

    I gave that a try recently, I only used one cup of flour and 2 of water and it yielded a small portion for 1, but it was very nice. I used Better than Bouillion chicken flavour broth to simmer it in. After a little research I read that a higher protein flour such as strong white will improve the outcome, as well as really washing it well. Haven't tried the 'beef' version.

    I made some for the first time over the weekend! I found it really easy and the most time consuming part was waiting for it to cook and leaving it cool to refrigerate it over night.

    I made a beef style one and used it to make philly cheese steaks with enough of the 'loaf' left for another 2 meals this week.

    Edit: I used vital wheat gluten from a health store, spices, water, nutritional yeast abs vegetarian beef stock to flavour it. Very tasty end result.

    Where do you folks get the 'chicken' and 'beef' broth? Does it make a big difference to flavour versus a bog standard vegetable one?

    Thinking of making a 'chicken' out of the strong flour I have here.

    I use Better than Boullion chicken flavour vegetarian broth, I get it from amazon. It's pricey but a little goes a long way.

    I have done it a couple of times, the better you respect the waiting times, the better it comes out! I have tried just by adding my own mix of spices (that is whatever I feel like really) and it just lovely.

    I was thinking now on tried on small balls/sets of knots instead of one big thing. Anyone has tried and has any advice?
