Any advice on what exercise would be good for building all over muscle strength. I've pretty poor muscle tone and I want to pretty much strengthen up all over especially upper back. I'm not a gym person. Would rather do some activity. I love swimming so was thinking that might help or maybe indoor rock climbing?

Honestly there is no easier way to make a measurable strength improvement than by doing a strength-focused program with weights in the gym. If you are a complete novice you would make substantial gains within a matter of a couple of months.

If you are not a gym-goer you could consider buying a TRX or kettlebell or two and training at home, that would be another option.

However... Any strenuous sporting activity that you enjoy would give you at least some benefits. I do think indoor rock climbing sounds like it is likely to help develop upper body strength, but I've got no personal experience. Judo or brazilian jiu jitsu would be another activity in this vein, but not in the current climate.

Rock climbing would to an extent because you're performing movements with a resistance component. Swimming, not so much.
