Rice Salad

225g long-grain rice, boiled and drained ~ let go cold
1 small onion, peeled and finely chopped
1 green pepper, cored, seeded and finely chopped
1 red pepper, cored, seeded and finely chopped
4 tablespoons chopped nuts (almonds, cashews, peanuts, walnuts)
4 tablespoons bottled mayonnaise
black pepper
salt

Put all ingredients in bowl with salt and pepper to taste, then stir carefully but thoroughly so that salad is well mixed.

Variations:
Substitute 225g (8oz) can sweet corn and peppers (drained) for green and red peppers. Or sub 50g (2oz) packet nuts and raisins for mixed nuts.
If preferred, use French dressing instead of mayo.

Can anyone recommend a recipe for a cottage pie - I had a delicious, rich and tasty one last month - I imagine if you were a carnivore you wouldn't miss the meat - looking to recreate it and had a poke around online but some of the sauces look quite watery. The one I had was predominately kidney beans with various veg like carrots, peas, tomatoes.

a good quick tutorial for those afraid of making curry Tinned potatoes tho - i've never heard of them before, and i'm frightened!

I've seen them in some Tescos, UK Tesco seems to have a much wider range of tinned veg though. I'd say they're an acquired taste but surely any unpleasant taste would be masked in a curry? Apparently they're cheaper than buying the bagged baby potatoes.

Super tasty and healthy dip/salsa, copied out of an intereview with Nigella Lawson.

- 1 bunch of coriander
- 1 jar of grilled peppers
- 1 clove of garlic
- salt
- lime juice

Blend in the food processor until you have an awesome red and green speckled dip.
