225g long-grain rice, boiled and drained ~ let go cold
1 small onion, peeled and finely chopped
1 green pepper, cored, seeded and finely chopped
1 red pepper, cored, seeded and finely chopped
4 tablespoons chopped nuts (almonds, cashews, peanuts, walnuts)
4 tablespoons bottled mayonnaise
Put all ingredients in bowl with salt and pepper to taste, then stir carefully but thoroughly so that salad is well mixed.
Substitute 225g (8oz) can sweet corn and peppers (drained) for green and red peppers. Or sub 50g (2oz) packet nuts and raisins for mixed nuts.
If preferred, use French dressing instead of mayo.
