Looking for suggestions on a caterer that would have impressive vegan options. If anyone knows of someone.

Any good caterer should be able to help you out! You will know by their attitude and menu how good they will be. sorry don't have any better recommendation!

We get Bella Italia in work every week, which offers some vegeratian options. You'll have to get out the phone really. I don't think anyone focuses on vegan options, but I'm sure they'd be able to offer some suggestions.

There's a vegan cafe called Peckish in Ennis (Merchants Square) (I haven't been to it, just heard about it)

I don't know if they do catering, but no harm in asking them.

They don't have much of a website yet, but they do have a PDF of their menu up there: http://www.meanwell.life/

Peckish food is lovely, great to see someone offering something different in Ennis (and doing it really well). I speak as a vegetarian myself.
