I have cut a portion of plasterboard away to gain more storage space. I want to put a finish of some sort on it so it doesnt get chipped away. It wont be used too often. Likely the bits and pieces put there will not be moved often. Any suggestion on what I could use to protect the exposed part?

You could frame it with wood, like a door-frame / architrave.
