I’ve gone skiing every December for the last 12 years and it’s a great time to ski.
Obviously you need to be flexible and aim to go high.
Book your flight now to either Geneva or perhaps Munich and wait until a couple of days before you go to make a decision on where to ski. It’s very easy to get accommodation at as resorts are only gearing up for the season and slopes tend to be very quiet.
Tignes/Val and Three Valleys are an obvious option from Geneva and there are plenty of Austrian options from Munich too.
Do a bit of research about opening dates of various resorts too.

There are quite a few glacier ski areas where early snowfall is not needed.

One I'd suggest is Garmisch-Partenkirchen as you've the Zugspitz glacier skiing if there's not early snow or the Garmisch Classic resort if you do get early snow. There are some nice long uncrowded runs on the classic!

If you're into steep off piste, and have a ski buddy or two, there's an option of skiing from the top of the Zugspitz observation level down to the ski area. But... you slip off the edge, expect multiple broken bones - if you're lucky. Consult a local guide before dropping this.

Consider the Dolomites, excellent snow making if nature does not deliver. Most dolomites areas open Dec 1 Dollies accessible from Milan, Treviso, Bergamo.

We did Tignes in Mid december a few years ago, flew raynair to Greneoble and rented a car from there.
Conditions were pretty good and the slopes were very quiet, accomodation was half price.

Dolomites are fantastic but too far transfer for a short break.
Try Milan and La Thuile, Champoluc in December
