Mustard Ice Cream

Anyone had the opportunity to try this? Could I make it at home?

The Fat Duck's famous egg & bacon ice cream set a trend across the UK restaurant menus for savoury sorbets and ices. Now you can tuck into some of Heston's savoury ice cream first-hand, with the latest range of 'Heston from Waitrose' products.

Heston's mustard ice cream costs £2.79 per pot, and is made using Pommery grain mustard and sugar, to give it a sweet and hot flavour. If you're wondering what on earth to pair it with, cold meats and chilled soups are good matches for this savoury stuff. iLoveMyGrub sampled some delicious mustard ice cream a few years ago at a restaurant called Launceston Place, where they served up the strange combination of mustard ice cream with a gorgeous cheese souffle. It might sound odd, but sometimes the weirdest things are the most delicious.

Other ice creams in Heston's new Waitrose range include Salted Caramel Popcorn, and Chocolate with Rosemary. If you want to confuse the hell out of your taste buds, grab a pot and try it out. It might perplex your mouth and woo it at the same time.

“This is the first ever commercially available savoury ice cream," says Heston Blumenthal. "It’s both sweet and savoury at the same time! It is brilliant served with chilled soups like gazpacho, cold meats, smoked fish, hot or cold ham and tomato salads.”

If this talk of savoury ice cream is all too much, there's always the option of a few deep breaths and a packet of Heston's frozen biscuit dough. You are actually supposed to make biscuits with it, and not gnaw on it straight out of the packet - but if your taste buds are begging you, it would be pretty rude to ignore them.

The latest 'Heston from Waitrose' products are available in store at Waitrose from the 9th June 2011. They include:

Well, I know Heston has a cook book out, perhaps the recipe is in it?
Would love to see what that tastes like.

Heston studies food at the molecular level.
Thus pairing food together which would never have been thought of before.
The results can be divine.

Not Hestons recipe but here you go:

Mustard ice cream
¼ pint milk
¼ pint double cream
4 egg yolks
4 tsp glucose syrup
1 tbsp coarse grain mustard
1 tbsp Dijon mustard



To prepare the ice cream, bring the milk and cream up to the boil in a pan. Meanwhile whisk the egg yolks with the glucose and mustard in a bowl. Slowly add the milk and cream to the eggs, whisking constantly. Allow to cool. Place the mixture back into the pan on a low heat, stirring constantly until it reaches 67 degrees C. Remove from heat and allow to cool again. If you have an ice-cream machine, add the mixture and churn. If not, place it in a large bowl in the freezer. Remove every 15-20 minutes and whisk. The ice cream should be ready in about three hours.
