Do they allow folks to adopt Greys off the tracks/kennels after they've retired?

They most certainly do, and they make fabulous pets.
I'm sure your local track can provide you with information.

a few people on here have them. I have two lurchers, and rescued and rehomed another greyhound (no tattoos though).
The Orchard Greyhound Sanctuary and Cottage Rescue are two very good rescues that take in greyhounds.

Great site... I'm glad they're taking up that cause (even if I'm cynical about their reasons for doing so).

I recently contacted Orchard Rescue and found out the gal who runs it is an ex pat. I'll be visiting with her soon.

I spent last weekend there. It was nice chatting with another American at length for the first time in months, especially since most of the topic was Greyhounds. It was also very therapuetic to be surrounded by all her loving dogs after having just lost mine recently. I will be working closely with Mary Jane in the future, and have set aside some time this week to help her around the house.

    Thats good news :)

I've never visited or met her, but we've been in contact online. She knows her horses too.

PAWS also take in greyhounds & lurchers ..... www.paws.ie
you should also keep an eye on the urgent matters section of http://petsireland.invisionzone.com because greyhounds also get surrendered to the pound sometimes as well.

I am about to move out into the country. Once there, I will take in a couple of Greys as my own. I will have about 2 acres of property, and intend to build a kennel suitable for maybe 3-4 dogs(that's all I can handle by myself). I intend to be a last ditch holding shelter for the Greyhound rescues when they call me to pick up a hound. I may also take in the occasional stray I find.

Here's my photos from Orchard Rescue and my Greyhound Rescue page:
