    Mozzarella is not the best cheese to be melted, it's very watery.

    About the taste: it depends on the quality of your mozzarella

    +1 on the quality thing.

    Cheap Mozzarella is rubbery and tasteless - I thought I didn't like it until I tried some good buffalo Mozzarella. It's soft and creamy with a lovely mild flavour. A shame to be melting it as it goes away to almost nothing.
