Hi all,
Vanilla are planning an update to the site on April 24th (next Wednesday). It is a major PHP8 update which is expected to boost performance across the site. The site will be down from 7pm and it is expected to take about an hour to complete. We appreciate your patience during the update.

Quick recipes ideas

    Why don't we do the charitable thing and share some recipes ideas for a nice dinner that we can all do.

    Prawns and avocado pasta

    Juice of 1/2 lemon
    1 Avocado (Not just used by hipsters)
    clove of garlic (Or if like me 3-4 gloves)
    Handful of fresh basil
    Some chili flakes or smoked paprika.

    Fire all into a blender and blitz until smooth ( add a little olive oil if needed)

    Boil your pasta (whatever type takes your fancy)
    Pan fry the prawns ( I have used plain and marinated – both work well)
    When pasta is done – drain and stir through the Avocado sauce

    Serve with the prawns and top with a little parmesan cheese (notions I know)

    All done in about 15 minutes – tasty, healthy and easy.
    (I don’t really like avocados on their own but done this way they taste gooood)

    west african chicken and rice.

    brown some skin-on chicken pieces in a little oil in a pan (legs/thighs) and set aside.

    fry some onion, hot chillis, red bell pepper and garlic in the same pan until soft.

    add a mug of uncooked rice, 3 spoons of tomato paste, 4 chopped tomatoes, tsp of turmeric, a chicken stock cube/pot and water enough to cover and reduce heat to simmer and return the chicken to the pan.

    when the rice is cooked stir in a a bag of baby spinach. the chicken should be cooked through and tender.

    Seafood never gets a dusting of parmesan!

    That said, sub out your avocados for three or four cherry tomatoes, chopped, and the prawns for briefly seared squid rings or pieces. Rather fine.

    Ohhh yeah it does - its savage. (I just like Parmesan so I'd happily put it on anything)

    Homemade traditional carbonara

    Pasta (spaghetti or tagliatelle preferred)
    Bacon lardons or pure pancetta if you can get some
    Eggs (1 per person)
    Garlic clove
    Parmesan/pecorino/both

    Boil the pasta with salt for 10 minutes.

    Add olive oil to pan and heat. Add bacon lardons, cook about 3/4 mins.

    Mix eggs into a bowl with sizeable amount of said cheese.

    Let pasta to cool and bacon to a warm/hot temp. Do not remove bacon residue from pan. Mix together pasta and bacon well in the pan, and add the egg. The cooler Temps prevent the egg from frying up but instead mixes with the oil and pardon fat to create a lovely cheesy cream.

    Serve and dress with more cheese or herbs. 12 min job for A class meal.

    Boil the kettle.
    Peel back partially the foil on the top of a Pot Noodle using your thumb and index finger on whichever hand you prefer.
    Pour the boiled water you made earlier directly onto the noodles leaving a small gap at the top.
    Carefully roll back the foil back to the position it was in before you began this complex procedure.
    Watch a few minutes of Corrie and pause after 5 minutes.
    Return to the pot noodle and peel back entirely the foil until there is no foil left attached to the plastic pot and discard (bin it).

    (optional) Transfer the noodles from the plastic pot into a bowl*

    The dish is now ready to serve (eat).


    *not recommended.

    I use the the whites too personally. I add more yolks if I want a creamier finish but depends how much fat is on the bacon to render

    I was doing a secretarial course after I left school. There was big mix of ages there and one of the classes was communications. As part of the class one day the teacher asked us to stand up and detail how to make scrambled eggs as practice for presentations.

    I had to go first and I hated public speaking so I was nervous about it. I said something like 'eh you crack two eggs into a bowl, throw a bit of butter and milk in, mix it up and stick it in the microwave.'

    The teacher looked at me funny and some of the women were laughing. I said 'What, that's how I make them.' I only realised why when the woman who followed me did hers and explained it much better...and she didn't recommend using the microwave :D

    Goodfellas/supermarket brand deep pan loaded cheese. Three grams of finely powdered hashish, some grated cheese.
    Preheat oven to 190°. Place pizza in oven as normal, cook for 15-17 minutes. Remove pizza, set oven to 140°,sprinkle the powdered hash evenly over the half cooked pizza then cover with grated cheese. Once the the temperature light indicates 140° place the pizza back inside and cook for a further 10 mins. The lower temperature drop is important, as anything more than 150/160 will spoil the hash. When ten minutes pass, remove pizza and let sit for a few minutes. This way, the hash, which is lipid/fat soluble has a little more time to infuse into the cheese. More importantly, you don't burn the bleedin gob of yourself! Eat the pizza and kill your hunger. Sit back for an hour, maybe a bit longer and the effects will start to kick in and you'll be a happy chappy.
    Serves 1-2 people. A little warning I must advise heeding though, for individuals without a heavy cannabis tolerance I'd recommend using half the dose as the cook would be tripping balls, cursing my good self and not enjoying the experience whatsoever. Start with a small dose and titrate up until the sweet spot is found.

    Anyone around Maynooth - I just made enough of this for 4 people - more than I can eat.

    5 Minute Surf'n'Turf Lite.

    Lite because instead of steak and lobster it is Young Bull Minute Steaks and King Prawn.

    Anyway I do not like to make a cooking effort when I am alone and since the GFs and Kids are away tonight I threw this in the Wok in 5 minutes and it was ready 10 minutes later.

    First throw some pasta on to cook:

    Throw Frozen pre-Shelled Prawns into a wok with butter and chopped up Chilli. Then start slicing young bull into strips and throw it in on top:

    Throw on top: Strips of pepper, tomatoes, small packet of salted Cashew Nuts, and juice of whole fresh lemon. Then when pasta is ready serve outdoors in the shade with a grape based drink white and sparkly and made of alcohol hehe:

    I always make in microwave, exactly same way as you described. With a sprinkle of salt and pepper.

    If you're feeling fancy ,King crisps are an option.

    King crisps everytime. Otherwise the recipe is brilliant in its simplicity. It's a recipe I use often.
    Tip. Lob an easy single slice into the mix, you'll thank me for it if/when it hits the palate.

    I always make in microwave, exactly same way as you described. With a sprinkle of salt and pepper.

    Yea that's what I thought but they were adding garnish to it and everything :rolleyes: :) I honestly can't make it in the pot because seeing it coagulate turns me off eating it.
