Deleting Photos off my Ipod

Ok, using iTunes, i clicked on the "iPod Options" folder and then clicked on the photo tab. I clicked copy all photos to my iPod. That worked great. But there doesn't seem to be anyway to edit the names of these photo folders or deleting them off my iPod. Do I have to buy iPhoto to do this or am iMissing something?
