Whats a good excercise to get broad muscly shoulders. I have a punch bag but i'm not sure if that helps my shoulders.

Work your traps and deltoids. I think alot of it is to do with genetics however.

My favourite shoulder exercise is the standing military press. This is an excellent exercise however it seems to hit the anterior delts more than the lateral delts so will likely result in big, thick shoulders rather than wide shoulders.

As with any exercise, be a bit careful when doing the military press. Start off with a light weight and build up slowly over a few weeks. Be careful not to arch your lower back excessively or lean backwards too much - if you do the exercise becomes less effective for your shoulders plus you risk hurting your back.

Can shoulder exercises really make that much of a difference to your shoulders width-wise?

depends on the exercises you do!
if you hold the weights(free) by your side and raise your arms (away from your body on your sides) to shoulder level without banding your elbow. this builds your shoulders up alot if done properly

To give yourself the broad shoulder look there are two things you can do:

    1) Actually make them bigger. Focus on using big exercises like military press with barbells and dumbells (alternate). To get width, you want to build the lateral deltoids so that means side raises. Don't go heavy, if you use any more than 20 lbs when you start you're cheating on form. Don't hump the air - keep you lower back steady and use the shoulders, not momentum to lift the weight.

    2) Part of the look is an illusion. A broad back (developed lat width from chins and pulldowns) and a narrow waist give the illusion of broader shoulders - and i suppose good posture!
