Rip the vobs to your HD as per normal ripping procedure.

Get DVD2AVI (i think the latest version is called DGMPGDec, or DGIndex), and open the all vob files in that. Then select Audio -> Output Method -> Decode to Wav.

Then hit File -> Save Project. You'll end up with a project file thats a few kb's in size, and one giant wav file ready to be edited/encoded.

    clicky linky

Easier again - get DVD decryper, select to "Demux" (can't remember where that is) and pick the audio tracks and angle you want. You'll be left with a series of .ac3 files. You can then use either "BeSweet" or "Headac3he" to convert them to MP3/WAV/OGG if it suits you. They can also downmix it to stereo if needs be..

[EDIT] You can get these tools and good info on how to use them from www.doom9.org [/EDIT]

Google for a program called DVD Audio Ripper. I've used it in the past and it seems alright (can rip to Wave or MP3 format). Will rip the audio from an entire chapter on a DVD. Might be worth a look for you.
