Just keep an eye in the windows of your local travel agents. There are almost always cancellations posted up in the windows - you got to be quick enough sometimes though - and ready to leave on short notice. If you are taking a late cancellation be careful and make sure you find out all the details you can before taking it. Be especially wary of ones that have something like "Accomodation on arrival" in the small print -

If you are not too pushed on where to go, well get on to the aerlingus site quick as their sale ends soon(tomorrow I think)
Flights all over Europe from €9 to €30 or so each way.
It should be easy enough to get a cheapish 2 or 3 star hotel after that.

You could try signing up to budget travels website - they send out last minute specials by email once you sign up for their newsletter.

Usually they give you 2 days to one weeks notice. I got some today for Saturday - 179 for a week in portugal.

    Also try aertel or lastminute.com

I think the budget website is www.budgettravel.ie - dont take my word on it though.
