    It's more important to have really good GF recipes for bread/cake/biscuits/pastry that actually work and taste good. If anyone has good recipes I think that would be beneficial for GF home bakers as commercial products are just so expensive. Has anyone got tried and tested recipes to share here for the OP and other Coeliacs?

    Scant cup of sugar

    half a jar of peanut butter ( or a bit more)

    one egg ( or two)

    some chopped crystalised ginger

    My 'go to' recipe for biscuit. All go for a whizz in food processor and biscuits made from dough. Form walnut size blobs and then flaten on baking trays. Bake for 14 minutes at 185 degree fan oven. Ingredients are forgiving so can vary…. I sometimes add ground oatsflakes.

    Porridge bread

    300grams rolled oats

    half teasp salt

    good teaspoon bread soda, sifted

    250g nuts, seeds, dried fruit (date and walnut with sunflower and pumpkin seeds is lovely)

    stir together

    add 500ml plain yoghurt plus 50ml/splash of milk

    2 eggs

    mix well. Makes a softer batter than the old recipe but not sloppy.

    Put into a lined (2lb? ) loaf tin - it will fill it but it doesn't rise much.

    Cook for about 65 minutes at 180C fan oven. It cooks rather dark coloured but is not burned. A meat thermometer will move round fairly quickly to 180 when it is done. Remove tin and liner and wrap in a teatowel till cool.

    Very accommodating recipe, juggle the fruit and nuts around as you like. If you don't want fruit and nuts leave them out but maybe put a bit more oats in. Experiment.

    I have been making versions of this for years, the earlier recipe had only one egg and was a stiffer mix, this is nicer.

    Honestly, for cakes I just sub in gluten free flour (Doves or Odlums GF) with some xantham gum added. Just ensure the raising agent is also gluten free if some is required. It always tastes fine. My supervisor was mentioning to someone that I bake really nice cakes, and it's such a pity that I can't have any as I'm coeliac. I had to tell her every cake I've ever brought in was gluten free 😂.

    For sponge cakes (2 tins) use the measuring method: Measure three eggs in their shells. That is the weight of self raising flour, butter and caster sugar required. Cream together butter and caster sugar (for dairy free use stork) until light and fluffy. Add 1 teaspoon vanilla essence/ Beat in eggs one by one. For flour if adding xantham gum ensure combined weight is that of eggs. Add 1 teaspoon of GF baking powder. Mix well and lightly fold into egg/butter/sugar mix. Add two tablespoons of milk/dairy free milk and mix. Add mix to two lined and greased sponge tins. Place into pre-heated fan oven at 180 C for 20-25 mins until done. That recipe can be adapted for different flavours

    For raspberry roulade:

    Ingredients
    4 egg whites
    8oz/250g caster sugar,
    1½oz/45g flaked almonds,
    icing sugar for dusting
    Filling
    250 ml double cream whipped until thick,
    Pack of Raspberries, sliced
    Method
    Pre heat oven to 180 ̊ C (fan).
    Separate the egg whites and place in a clean mixing bowl. Ensure that no yolk is mixed with
    the whites, as this will prevent the whites from stiffening.
    Whisk the egg whites at full speed until the egg whites begin to form peaks. They don’t need
    to be too stiff, as they will stiffen further when you add the sugar.
    Add the sugar a spoonful at a time whisking well after each addition, whisk until all the
    sugar has been incorporated and the mixture is stiff and glossy.
    Line a large baking tray with parchment/greaseproof paper . Spoon the meringue into the
    prepared tin and level the surface. Sprinkle over the flaked almonds.
    Place in the oven for 12 mins until the top is pale golden.
    Turn the oven down to 140 ̊ C and continue baking for another 10-15 mins.
    Remove from the oven and turn out onto a sheet of baking parchment/greaseproof. Peel the
    lining paper from the base and leave the meringue to cool for 10mins. Spread the whipped
    cream evenly over the meringue and scatter the sliced raspberries over the cream. Roll the
    meringue up tightly from the long side, using the lining paper to lift it. Wrap the roulade in
    baking parchment and leave to chill in the fridge for about 30mins. Lightly dust with icing
    sugar before serving.

    I have noticed if you say to non-gf people that cakes are gf they will avoid or even refuse them, if you just hand them round they will comment on how nice they are! Admittedly this wasn't always the case but now they are very nice.

    Do any of the supermarkets stock Xanthum Gum? I haven't been able to find it in Tesco or SuperValu.

    Be very cautious with xanthan gum, a very tiny bit can improve cake considerably, but too much will ruin it.

    Hi.

    My teenage daughter is gluten free so here are our suggestions for food beyond the potato and veg and roast chicken dinners

    As we live in the country,we bulk buy to a certain extent and we use a drawer in our freezer to store a the following foods for her.

    Rosie and Jim range available in butchers and some shops have gluten free breaded chicken Goujons.fillets,schnitzels and shredded chicken. An air fryer cooks them so quick.

    Invest in a food thermometer so they are not overcooked

    Lidl have fresh Irish Angus burgers which have gluten free written on the front in small writing

    Also some SuperValu have them.

    M@s gluten free products are dark purple packaging and are grouped together

    We use m@s soft round white rolls instead of burger buns. We freeze them as well and take out one when needed

    You can get gluten free puff pastry sheets in the supermarkets to make meat pies or DIY vol au vent cases. Often not in stock but Dunnes seems to have it more often. Again we buy 2,use one,freeze one.

    M & S hot cross buns are gorgeous! However, I'm still hoping for GF baking recipes. They are a bit hit and miss whenever I bake. The OP was also looking for recipes. Anyone have any successes?

    Back again

    You should check out Indian/Asian food shops if you can. A lot of large towns have them now.

    You need to browse but for example there are gluten free noodles and sauces.

    Most especially large sizes of Kikkoman soy, and lee kum kee oyster sauce at good prices.they also have G/f maize flour that you can make wraps with.

    Not the healthiest suggestion but we ended up getting a deep fat fryer that we use for homemade chips only. Friday is chip day in our house and a G/F chicken schnitzel/fillet or G/f beefburger in a m&s G/F bun does the job for our daughter so takeaways are less of an issue.

    You could always use an air fryer for the chips but it's only one day a week!

    As regards gluten free bread put the crust ends in a blender and freeze the breadcrumbs for stuffing or coating meat.

    I make my own burgers (add some gf breadcrumbs, egg and chopped red onion) and freeze and yes M&S bundies are best tho pricey. They say if you bring your own gf bundy to McDonalds they will make up a burger of theirs for you.

    If you can find some decent GF sliced pan, I recommend toasted sandwiches. I use a panini press as it does not bisect into tiny triangles with squashed edges such as a regular sandwich toaster produces.

    I got the Xanthan gum. Made a bread in the bread maker today. It came out really well. I'm doing well in general with food. Back to basics!

    I'm on the hunt for sausages next. I know someone here mentioned M&S, but we don't have one near. I'll try the Aldi ones. Was in SuperValu today and surprised to not find any GF sausages.

    Supervalu should definitely have them. Down here we have o'flynns in stock and they are decent sausage.

    You can get ones like Dennys (feck all pork) in aldi and lidl dunnes etc too.

    If you have a dunnes with the james whealan butcher counter they also have great GF sausages and you can also get sausage meat too

    Sadly not in my experience. GF Pizza bases can be okay at best and always noticeable.

    I see no reason why all sausages aren't gluten free.

    Although, as alluded to earlier, some ignorant people are put off by the gluten free label. Guy came into my local which only sells 9 White Deer beers which are all gf. Fella asks if they have any IPA other than the gluten free one he could see. 🤷

    That probably comes from the fact that GF bread was/is so different from regular bread. I have to admit I was cautious about trying GF beer myself.

    Fillers in sausages, could be wheat or barley perhaps.

    Cheaper to produce, but may be one of the reasons why people like the soft Irish "breakfast" sausage.

    I quite like them too!

    You could still have rusk, just gf rusk. Surely the texture would be much more forgiving in a sausage than, say, baked goods. I'm suggesting that it mightn't be difficult to produce a gf sausage that doesn't taste noticeably different to a sausage containing gluten. But I'm not a sausage expert 🤷

    (I'm also quite partial to a cheap Irish style sausage)
