What would be the best way to insulate a single leaf 6 inch block garage.

My son wants to move in to it uñtil he can save for mortgage

EWI and render on all external walls; job done.

Otherwise cheaper and cheerful option is strip internal back to bare block, stick vapour barrier up, install stud wall (4"x2") up tight to wall, insulate between studs, overboard with insulated plasterboard.

Very much a DIY jobby if you're that way inclined.

Theirs not enough roof overhang for EWI.

Could the insulated plasterboard be fixed straight to the block or would that cause problems

Aye, fixing to wall is very possible as well.

From my experience it doesn't make for a very comfortable living environment. Heating could be running around the clock in the depths of winter.

Go for the thickest available near you, 80/90/100mm deep. And keep an eye on ventilation so as to avoid the black lung!

Do not do this. Huge risk of mould at back of insulation

The point of the vapour barrier is so no moisture ingress beyond to warm side of insulation, thus nothing to condense. As long as all joints and junctions taped and sealed 👍🏻

While you seem to be well intentioned, this post shows you don't understand the basic physics here.

There are also planning issues around this

There's subtle differences between scientific theories and practices 😎

I've seen this in practice, Irish climate; no issues. Including our own stone cottage dry lined by my father in the nineties. We remodeled it a few years ago stripped it out and no mold no damp.

I'm not saying the conditions in farisfat's situation are similar enough to yield the exact same results, but I've seen it work so I'm recommending it. Don't overthink it buddy!

Ewi to outside, airtightness to inside and appropriate ventilation (probably central extraction system).

As long as all joints and junctions taped and sealed 👍🏻

Which is nigh on impossible to achieve in reality!

that’s not the point of a vapour barrier.
moisture will get to the warm dude if insulation through the front door like everyone else

vapour barrier always on room side of insulation.
