Ford transit connect cooling issues

I have a 2015 ford transit connect lwb. For the past few months I've had an intermittent issue with cooling.i can drive for the week and no issues. When I drive on the motorway, that's when the problem starts. The temperature needle reaches ¾ way on the gauge. It only seems to happen on the motorway. The expansion bottle is near empty and the fan is on. When I open the lid the coolant fills the bottle right back up and the fan turns off. I can drive away again for a few hours. As it stands I've had 2 water pumps, 3 thermostats and a egr cooler fitted along with 2 system flushes. It's getting expensive. Has anyone had this issue or ever heard of this issue. Any help would be greatly appreciated. My mechanic is scratching his head with this one but assured me it's not a head gasket problem.

    Thanks folks
