Kitchen ventellation

Recently got a new kitchen inserted into what was termed the good room in my old house and an extension out the back. This good room had a fireplace and chimney going out up past two stories. The old design with two chimney breasts in the center of the house separating the house into three sections.

The builders installed a charcoal filter over the cooker hob. The hob is where the fireplace used to be so the filter over the hob backs onto there the chimney bread used to be. They did not install any ventellation so the charcoal filter just lets the moisture out around the kitchen. Doing ventellation would be a follow on job.

Can I just let the moisture out into the chimney breast through the wall and up away out through the chimney. I would use metal ducting of course. Anyone see any issues doing this?

    Thanks
