We're holding a U11 hurling blitz with six teams , we are tight for space and wondering would 10 aside teams work ok for that age group

No reason why not. My own club has organised an annual U11 hurling blitz for the past few years where we play nine-a-side, and it's always worked well. Am sure ten-a-side would be fine too.
