Looks like boiler in the stove is leaking, it was never great any way as it was not really suitable to heat 16 rads and a large living room, not really looking to replace boiler but would like to keep stove in living room just to heat room itself so my question is can we just cut water supply to stove and empty back boiler and use it that way.

It’s generally not a good idea, the stove will be inclined to warp and crack. The boiler elements will become much hotter than they were designed for. I would advise against.

If you do decide to do it, make absolutely sure that the stoves boiler connections are fully open to free air and not blocked in any way.
