Kitchen Wall tile project

Hi All, Was going to put this in the Interior Design and Decoration forum but never got any traction on a query I put in there before.

I'm intending to be tiling the walls in my kitchen. I'm looking at subway tiles at the moment - 200mm * 100mm - will be putting them on a traditional brickwork style pattern. Going 5 tiles high and allowing for a 3mm grout line I would be going up approx. 10mm above the very bottom of the wall units - as in approx. 10 mm above the bottom of he moulded lat's stuck onto the bottom of the wall units.

My first question is - underneath the actual kitchen units should I go right up to the bottom of the units with another cut tile (approx. 30mm to 40mm more) or should I keep it at the 5 tiles high and bring the tiles to a uniform height all round? - pictures show the situation better. I intend putting a tile trim on the top.

Next question - would like opinions on colour of wall tiles and grout colour to go with? The worktop is an off black - dark navy I'd call it. Photos attached.

Thanks in advance for all constructive input.
