Immersion cylinder - steel or copper

We are looking to upgrade our standard domestic immersion cylinder in the hotpress. It is getting on and it is not insulated. Water heating is via the electric element and the oil boiler.

What is the preference between between copper and stainless steel? Any particular pros and con, or other considerations? I believe it is a "vented system" - tank in the attic.
