Just wondering is it OK to go collect a caravan during lockdown.

Probably not a question for this forum.
Does it fall under the category of "click & collect"?
How far do you have to travel and how many checkpoints are you likely to encounter?
If it was local you'd probably get away with it.
However, if you were travelling from one side of the country to the other, I can't see you getting away with it. Is it really an essential journey?

Would it depend on the purpose of the purchase of the caravan?

If bought as (or to replace) a holiday home caravan, then that might not pass. If it's to house you or a family member (or replace a currently occupied caravan for housing purposes), then I'd imagine that would fall under essential.

As above, if it's click and collect, so all you're doing is collecting it, then bring along the payment / deposit confirmation to show the Gardaí if stopped.
