Are the Canary Islands accepting passengers from Ireland currently? Has anyone been recently? Is a negative Covid test required for travel with Ryan Air?

There are no restrictions on people travelling from EU countries to Spain.

Yes and they have been since the start of June.

Just flew back from Spain 2 days ago.

No covid test needed flying to or from. No questions asked either.
My grandparents flew back from the Canaries last week. Busy enough. No covid test needed on either side.
