Brazilian Ginger

    At the start of lockdown, a number of supermarkets started to supply Brazilian ginger rather than Chinese. It seemed fresher, thinner-skinned and more aromatic. The supermarkets seem to have reverted to Chinese. Has anyone seen the Brazilian around recently, or an equivalently thin-skinned and fresh rhizome?

    I want to make crystallised ginger so want to start with the best product available.

    What a great idea. I didn't even know they exist as I avoid the city centre completely these days.
