Is a gap in the service history a red flag? I'm looking at 2015 car up north and the service history (in miles) is:
    Oct 16 - 18k
    Dec 17 - 23k
    Sep 20 - 44k

Depends on the seller and the car.
Could it have been done, but not added into service book?
Is the car is good condition otherwise?

I don't know if it could have been done, I'm buying from a big dealer and they just got it in.
The car is in good condition otherwise and comes with a 12 month warranty

I wouldn’t be too concerned about it but if it’s diesel I would like to drill into whether it got fuel filters and when.

    It's a petrol

    Ford Focus 1.0 EcoBoost

18k first year , 5k second year , then an average of 7k for the next 3 years . It is plausible for a 2 owner car with indy service year 3 and 4

I’d be really put off by that. You’d want proper history on that.

Why for the model in particular?

If it was a regular normally aspirated engine then I wouldn’t be as worried, but this is a direct injection turbocharged tiny engine working a lot harder.

nothing to worry about, far too much is put on the history. looks ok and has no rust - game ball

    So servicing isn’t required now?

It seems caution to the wind is much easier to give when it's someone else's money.

As Colm says, service history is critical on those engines - they’re not nicknamed ecoboom for no reason....

Surely there’s plenty of alternative cars out there?

I did some research and it seems its the older (pre 2015) models that had most of the issues. This one is 2015
