Advice needed - what jobs/services are in demand in the west of Ireland?

I know that this is a long shot query, but I figure that it's worth a try:
Could any of you out there suggest jobs/services which are in demand in places like Mayo/the west of Ireland?

You see, my lovely partner, who has been working as a greenkeeper for many years, would like to change direction and do something different in the future, but he’s not sure what is feasible, given where we live. We both very much enjoy living in Mayo and have no interest in moving to a city.

My partner is physically strong, has a good work ethic and is super conscientious re. his work. Whilst not academic/bookish, he is innately intelligent. He is good with words, likes doing things like IQ tests and he enjoyed maths and physics when he was in full time education. He is tough and likes the outdoors. I can't imagine him cooped up in an an office from 9 to 5.

In the past, he studied golf course management and also health and safety at college. He is prepared to retrain, but only if he is fairly sure that the qualification gained will lead to him being able to make a half decent living in Mayo in the future.

I would really appreciate any insights or suggestions that you might have.

I work in Galway city and a huge percentage of my work colleagues are from Mayo. Would your partner work in Galway? It would open up more opportunities for him.
