Hi. I was just wondering, hypothetically, if someone received and paid a fixed charge notice and received two penalty points for ... dangerous driving for example, does that mean he/she would then have a conviction against their name?

If you receive penalty points there is no conviction, however your example of dangerous driving is not a fixed charge offence, mandatory court appearance.
