Finely ground mince

    Any mince you buy i Ireland is invariably coarsely ground. i'm looking for finely ground beef and pork of the kind that will melt away in to nothingness in a ragu. Asked a local butcher and he looked at me like i had two heads. Is it just a case of going to a better butcher?

    Just ask them to put it through the mincer a second or third time. A decent butcher should do this for you if you ask.
