I live on a moderately busy road but for almost 2km either side of my house the road is lined with raspberry and blackberry bushes. Wondering how safe if would be to harvest these for to make an Apple and Berry wine?

Emissions from cars and whether the hedges were sprayed with pesticide would be top concerns.

There are so many ripe berries, would be such a waste to not convert them to alcohol.

Doubtful the hedges would be sprayed with pesticide.
You would probably have noticed if it was sprayed with herbicide.
