Whats the best way of getting an electric fence around fields that are fenced with sheep. Would high tensile wire be the best?

I used Polywire and have no complaints, cheap as chips and very easy to work with.

Only complaint I'd have about that type of wire is that the connection can break at any point without it being obvious, as the plastic part can still be intact. Might only apply when using old, worn stuff though

I'm not being a smart arse now, but why would you use old worn stuff for such an important job?

I use the shagging thing for everything except holding up me pants and I can't seem to get half way through the roll I bought about 4 years ago for 11.50.

Yeah, HT wire is the job but a bit difficult to work with. Have a look on Youtube for ideas on how to work with it. And get a spinning jenny for rolling it out, something like this.

The mild steel wire sags after a time and need to be tightened up regularly, the HT doesn't.

To be fair ht wire is easier to use than mild steel. It will not sag and shouldn't loosen if strained properly.
Tying it is easy after a wee bit of practice, actually much easier than mild steel as it will be easier to form a proper knot and will keep its shape.
A jenny is essential but rather simple to make.Made one here from a few bits of tubing from a wrecked gate,4 bolts and nuts and a piece of round bar.Has lasted 10 plus years.don't even think of using ht plain wire without one or you will have a very messy and expensive piece of unusable scrap very quickly.
Also proper insulators are a major difference to some of the rubbish people use ie those soft plastic things you close over the wire and use to dtaple to kep closed. No idea why anyone would even consider using them
