What is "usual" schedule of payments for one off builds using a main contractor?

It depends on many factors but main ones would be
    • subfloor level,
    • wallplate level,
    • sealed structure( roof on windows in),
    • first fix,
    • second fix,
    • practical completion
    • final retention release

Thanks for that. Would the amount to be paid reflect the cost of each of those stages or is the total divided by the number of stages?

The amount to be paid reflects the value of work done of each of those stages, generally its work done and materials on-site (minus retention) or milestone payments at agreed lump sum amounts. Your Arch/Eng should advise you on this.
