Hypothetically, a company which is a "services company" (>50% income generated by providing services to a connected professional individual) but also has circa 40% income from non - professional services to 3rd parties.
Is the surcharge applied to all trading income which is undistributed or to only the professional services trade to the connected party?

Yes it is unfortunately. This is why some accounting firms put their bookkeeping and payroll services into a separate entity.
