So I'm going to be going over to Sydney for 3 months and was wondering does Ireland have any company that does a data plan for Australia ?

If not I can just get a Sim plan over there but it would be handy if there was.

There are plenty of sim only data plans in Australia so just wait until you get to Australia.
If you were to get one in Ireland and use it in Australia you would most likely be charged roaming rates.

As Aido79 said wait until you get here. If you are travelling lots, rural areas Telstra is your best bet for coverage or a network that uses Telstra's infrastructure (I think the likes of Aldi Sim cards use Telstra).

    Plenty to choose from here.

Aldi mobile is great value. They are an MVNO on the Telstra network, who have good coverage across the country. You just pickup a (3-in-1) sim for $5 in an aldi store, and add a value pack. https://www.aldimobile.com.au/plans/value-packs/
