Plastering advice

    I am renovating an old house and want to try my hand at as much of the work as possible. I have stripped most of the wallpaper off the walls and on some walls the plaster has come away to a depth of spprox 8mm. I have had plasterers in and the standard advice is to plaster and skim everything, using 50mm insulation board on the front walls which gave been damaged by a previously leaky chimney.
    My quotes range from 4-4.5k, at this stage I am confident enough about the slabbing element (I think)...
    50mm insulation board on front walls, approx 15 plastic mushroom fixings to avoid thermal bridging. Should I use adhesive too??
    My main question is can the other walls be patched up in a more cheap and casual, yet still effective manner? Such as plaster the holes first (what mix) and then lightly skim the rest of the walls, sanding and reapplying if necessary??
    The walls are old enough and bumpy in places, I want to retain the character of the house so don't mind if it's less than a modern plasterboard skimmed finish. I'll post pics below, any advice guidance greatly appreciated 😊

    Also I need to patch up stippled ceilings, I read that filler mixed with (undercoat?) does the job...any opinions?

    On one of the flat walls too there is a patched up chimney place with there is a bit if give when it's pushed, and other patched up spots too that are hollow to knock on...what's my best approach here??
