Advice on expanding a family business.

Currently I'm involved in running a family business where the parents are due for retirement soon.
We are a small family appliance repair business with 2 engineers in total between workshop and field service (both family members) looking for advice on the next step regarding safe guarding our business as one of us engineers will be retiring soon. Does anyone here have experience of this type of scenario.
We are looking to progress the business to go from strength to strength and safeguarding our position in our service area.

Looking for advice on book keeping/invoicing and collecting money.

Looking for advice on hiring an engineer and set him/her up on the road so as they are competent, maintain our family name but more importantly not steal customers down the line etc.
Also wage structures etc should we have to employ an engineer and an administrator for the above work.
Any help of advice would be greatly appreciated.

    Tia
