Pipe Sizing help required

I am installing 12 X 220Litre jacketed fermenters in a brewery. Cold water from a dairy tank will be used for cooling instead of glycol.

Each fermenter has 15 metres of 1/2 inch copper around them and insulation.

I am planning on using 3/4 inch pex to feed in to each one but I have been told by a know it all, that I need to use 1+1/2 to 2 inch pipe.
I've never seen a house system fitted with piping this size.

Will the 3/4 inch suffice? and if so, roughly what pump specs would I be looking for?

Page 7 of this has some chart you can use to choose your pipe: http://www.pipelife.ie/ie/media/QPL_PDFs/PEX-Technical-Literature.pdf - print it out and draw a straight line essentially.
How much heat will your process give off? Possibly there is a spec sheet for the fermenter that states this? You can use that to start calculating what your flow rate is.
And also, how do you propose to deal with the output water from the cooler heat exchangers - circulate back to the dairy tank or dump the water? If circulating back to the dairy tank, there could be sanitary concerns, due to the circulatation of the water, and also heat gained... do you have a sketch of what way you want to plumb it?
