Maybe those quantities can be bought on the high street ?

    Maybe Aldi ?

I’ve previously bought 4-5 x 1kg bags of different nuts - Brazil, almond, walnut, pumpkin seeds and whatever else you like or is available.

Then I mix a cup of each in a large bowl with raisins, dessicated coconut and I also throw in 2 cups of salted peanuts as I find the mix bland without the salt you get from salted peanuts. I don’t think adding salt separately works very well.

Then I seal the individual nut bags as best I can until I need them again.

I put the nut mix in a large airtight container and I decant into a smaller container for daily use.

If it’s a struggle to get from lunch to dinner I find 1-2 handfuls of this nut mix to be really filling and helpful.

You mention being economical. If you are eating plant based then you can’t eat cheaper. Just avoid processed food and cook/prepare as much as you can from scratch. For example I still use canned legumes quite a bit but I don’t beat myself up about it. They are very affordable. In time I will get round to buying the dried variety and soak the night before cooking.

A lot of people seem to think going plant based is expensive but I can’t fathom this at all. If you are buying processed vegan food like cheese, mayo, sausages, and so on, then you will pay more than the animal based versions but processed food is not food. I never intended replacing those animal based products when I went plant based so I don’t think about how to replace cheese, mayo, ice cream and so on.

I cook/prepare almost 100% of everything I eat and I know exactly what I’m eating. It’s amazing how quickly you can eradicate processed food from your diet when you go plant based.
