Cooking vitamin C

    Ive been dieting recently for health reasons mostly to get more protein and vitamins, particularly vitamin C and A so eating lots of broccoli, bell peppers ect but now ive read that cooking veg destroys the vitamin C. How accurate is this? and can I prevent it?

    Vitamin C is water soluble so boiling veg is the worst thing you could do with regard to vitamin C.

    Steaming broccoli is the best way of cooking it.

    Across all the veg, the length of time it's subjected to heat has an impact and the amount of water used. Minimise water and time heated and you'll mitigate the loss of vit C better.

    You can make fruit, vegetable salad, to maximize the preservation of vegetable nutrition.

    Eat veg raw where possible.
    Don't prepare in advance as oxygen also destroys vit c.
    Use cooking liquid from veg to make sauces.
    Microwave is also a good method of cooking for veg as it is quick and uses little liquid.
