does anyone know how buillders dispose of the large plywood sheets they use to make hoardings around sites. A few of these would be perfect for a project I'm doing?

Yes - just move them on to the next site. They give them a quick lick of paint to freshen them up and they're ready to go again.

They are OSB as opposed to ply, really not that expensive to buy from a merchant.

What is the main difference between this and marine ply? I would have assumed they would have been marine ply

OSB, "Omni strand board" is dimensionally stable and in general water resistant.
Marine ply is as well but is many times stronger, more waterproof, and lasts longer. Also is a lot more expensive.
Not economical at all to use it for hoarding.

As their expensive to buy most builders reuse them. Gone are the days they would just dump them and buy some more.
