Excuse my ignorance on this but what is standard practice for dealerships in this situation?
Say I have a car worth €40k and I want to trade it in for a new car that's listed at €37k. Will a dealership take the old car, give you the new one and make up the difference, or would you have to take the hit on the difference?

you mean the dealer would retail the car at 40k? youll likely end up throwing him some cash...

If you think your car is worth 40k then you can be sure you won't get 40k for it from a dealer especially if you are trading down against a lower value car. Don't be surprised if your asked for money with your car from a dealer.

its hard to no chance dealer would pay you the difference, exception would be in case its wanted model, good condition etc,and if they knew they would be able so sell to someone fast, even then doubt any dealer would pay difference.

Since by the price sounds you got maybe 1yr old car, which tbh at that price many would buy new,if its extra few k difference, thus dealer would be having hard time selling it.

only way if theres reason you want to change, contact dealer that sells same models etc,and ask them to put it on the listing for sale,on your behalf, and even then some % would have to come out of your pocket or the price.

The figures I listed are all hypothetical - I was just wondering as it maybe on the cards at some point

Most dealers wouldn't be interested and I can't see them ever handing cash your way

I have done this before at a main dealer. Traded in a 1yo Grand Scenic for an 4yo CMax. The Scenic would have been easy to resell. I knew the realistic values of each and was straight up about it all and asked him to make me an offer. It was fairly close so did the deal. He gave me a cheque.
