Bicks Hamburger Relish

    Sorry to resurrect an old thread but does anyone know a shop that stocks bicks hamburger relish, I haven't had it in years and it's just the best relish none of the others compare.

    As does Amazon.


    Thanks for the reply but they are the catering tubs and I just wanted to buy a normal jar. It would go off by the time I even got half way through that jar. My search continues.

    Musgraves had the ingredients listed. I would take a photo and compare to ones in shops, I imagine some have tried to copy it. Ingredients are listed in order of greatest first.
    Ingredients:
    Water, Glucose-Fructose Syrup, Gherkins(16%), Tomato Paste(14%), Spirit Vinegar, Sugar, Diced Red & Green Bell pepper, Cauliflower, Modified Maize Starch, Salt, Whole MUSTARD Seed, Dried Onion, Dried Garlic, Thickener(Guar Gum)White Pepper.

    I have made my own burger sauces, I liquidise gherkins & onion and add sauces like ketchup, mayo or salad cream, frenchs mustard, thousand island. Put them in little tubs & freeze, and/or add more salt.

    You might also be able to spot the taste the others miss and buy a ready made one and add say bell peppers to it.

    Don't have the Glucose Fructose Syrup but nearly everything else - may give it a lash and try to recreate it from memory as it's been agesssss.

    I remember the bits of chopped up peppers and gherkins, onions and mustard seed. From what I remember it was pretty sweet in a tomatoey way, with a nice vinegary tang?

    I would not bother with it myself, very dear for home consumers, cheap filler for companies and seems popular in the US. I found Bicks to be too sweet. You could add sugar but the syrup might have a different consistency, it is not going to have a big influence on actual taste. Some of these companies will add stuff to make the product more "shelf stable", so it does not separate etc. So you will see them adding other fats to peanut butter, while the natural 100% peanut butters will tell you that it might need a stir. They might just add syrup to stop the roughly chopped gherkins sinking to the bottom.

    Here is ballymaloe country relish
    Ingredients

    Tomato (41%), Vinegar, Sugar, Onions, Sultanas, Tomato Puree (5%), Sea Salt, Mustard Seed, Spices

    Ingredients

    Tomato (46%), Sugar, Sultanas (7%), Onion, Spirit Vinegar, Tomato Pur Treacle, Malt Vinegar, Salt, Tamarind Extract, Mustard Seed, Spices.

    I make my own burger sauces, I would usually have ketchup as the base so it is sweet enough so I would never add more sugar. Then I add gherkins, onions, frenchs mustard, salt, garlic powder (I do not add mayo but would stick it on the burger when used). The garlic powder can clump so I put it in a shot glass and mix well with ketchup. This can be bltzed into a fine sauce, or add the onions & gherkins in later as chunks. If I want to keep it a while I would liquidise the onions so they mix in well and as subjected to the salt & vinegar which should stop it going off as fast. If I wanted it chunky and to be used a long time I would use pickled onions.

    I sometimes put it in smaller jars and freeze, and sometimes leave out the ketchup so it is a smaller volume, then just put a thin layer on a burger bun and more ketchup on top

    Thanks for all the tips! I wasn't too worried about the syrup as I knew it was just a form of sugar substitute / filler...can play around with maple syrup or honey if I'm feeling fancy ;)

    It's one of those classic cases that while I actually love aldi / lidl relishes (I think a lot of them are outstanding), my mum in particular loved the bics so as an xmas treat I was going to try to recreate it as it's difficult to get in store.

    I'm familiar with the perils of garlic powder as I have an unhealthy addiction to the stuff (or worse, garlic salt!) but I love the tip about pickled onions, great idea!
