Kitchen Appliance Switches

We are putting in 2 single ovens into a bank of full height units and a hob/extractor into our island.

What are my options when it comes to mains switching locations? The kitchen is an unusual layout so there is no wall position close to either the ovens or hob.

Can the switches be located in the units themselves? Under the counter in the island?

I don't want to leave it solely up to my electrician as they will likely end up in the easiest location for him.
