Have a Saorview approved TV in a new house. What kind of wires do we need to set up Saorview? Thanks!

Co-ax cable to an aerial required. CT100 or similar spec satellite grade cable

Use the coverage checker to identify which transmitter covers your location and which group aerial will be required - https://www.saorview.ie/en/get/coverage

You need an aerial. Do you know if there's any kind of aerial on the house? Any likely looking sockets at the TV point(s)?

If there's nothing else, an indoor set-top type might work if you can get a good enough signal, say putting it in a window with a view in the direction of the transmitter.
