Off season training nutrition.

The club GAA season is about to finish up (we will probably get knocked out in the quarter finals because we have so many of our main players injured but hopefully not)
We usually do no collective training in the off-season so I'm looking to capitalise on that. My diet has gotten much better from this time last year, but is still very carb heavy due to the ammount of training I do.

I have a resistance training program sorted for the off-season. I am wondering what I should eat on certain days. (Gym days, fitness days, off days etc.) I will be in school so I would need to have it all ready that morning or the night before.

Has anyone got any tips/templates the could help me (I've about 2-3 stone of fat I'm trying to get rid of and bulk up a in size and strength at the same time)

If anyone could help me out I would really appreciate it

You would be better served by cutting the excess weight and building up then. There is scope to burn fat and build some muscle at the same time but it's not as efficient as the alternative.
