    Hi everyone.
I'm hoping to buy a 2nd hand back boiler for an open fire in a 3 bed house but I might as well be looking in a ditch as I haven't a clue what to look for only that it heats 8 rads! I've seen a few on selling sites ranging in price and most of them look blackened and/or rusty.
How will I know if I'm getting a good deal and that it will work?

Put simply, you don't know and you could not only waste your money, but risk water damage to your property.
Buy new and get a reputable company to fit it for you.

If I could afford it I would buy new. I'm going to get it fitted by a registered plumber though.

I assume you mean qualified plumber not registered.
You'd be amazed how many plumbers can pipe solid fuel correctly, and even more who've never seen a back boiler, let alone fit one. So pick your plumber wisely.
And as k flyer said, get a new one. You have no way of knowing what internal corrosion has occurred previously in a second hand unit. They're only around 350. You'll either need a 16" or 18". Get a grant triple pass one.

A good deal is a NEW boiler
A bad deal is a second hand boiler.

A new boiler is cheapest part of the job and will be more economical and safer.
You have no insurance cover from either your plumber or home insurance with a second hand boiler.
If you will have dual heating, you will also need a dual coil cylinder, without that then you'll have a dangerous installation.
