I have 700 euro cash with only 3 weeks work behind me. Whats the chances of me walking into a dealership and getting a car thats worth 5-6k? Obviously I'd be getting finance

Zero unless it's a very shady outfit with astronomical APRs and a policy of kneecapping in-lieu of late payment.

Buy a gun instead and then walk into a bookies or post office. Come out with 5-6k.

Seriously though, anything at that price range would be roughly 10 year old, you'd never get them financed.

Could you give me an indication of what I'd require please?

Crazy getting finance if you are only in a job 3 weeks. Save up 2-3k and buy something to tide you over.

You need to be in the job much longer.
Usually need to be permanent too.

The last thing a bank wants is to go to the trouble and expense of repossessing a car. As it stands you're probably too much of a risk. If the job went skew ways then so might the repayments.
