Quick question - wiring kitchen countertop lighting

The spur coming out of our wall has live, earth and two neutral wires going back to a two-gang switch by the door. What is the second one for?

The spur was wired with the intention of installing strip-lighting above the kitchen counter.

What do I do with the two wires? Stick them into the same connection in the joint box? The wired cable in the wall is too short to reach the lighting, so can I extend it with a standard 3-core cable to the lighting fixture?
