    Hi Guys,

    I've been trying to eat a bit healthier lately and lunch is something that I tend to get a roll or sandwich from the deli counter in my local shop. I know how bad that when done regularly and have been trying to cut it out but sometimes i forget to get a lunch out go the freezer lunch or just don't feel like eating the lunch I've made.

    The lunches I've been making for the last few week would have been
    chicken brown rice and mixed veg
    Homemade chicken curry and brown rice
    Homemade Chilli Con Carne

    I would make a big batch on a Sunday and freeze it and have it everyday for that week. My shifts can vary and lot so the big batch has worked well as I'm may not have time in the evening to prep something for the next day.

    I'm getting really bored of this stuff now and I'm kinda slipping back into the deli stuff.

    I'm wondering if anybody has some tasty lunch Ideas that I can make in a batch on a Sunday and have for the rest of the week.

    Also If you have any snack idea for in between meals as well that would be great.

    I'm trying to lose a bit of weight in particular belly fat as that's where I carry most of my weight. I'm 5'7/8 and weight about 80KG. I train about 2 times a week with my football team but really lack any motivation to gym or anything more than that :(

    I really love the whole chickens from Aldi.
    You can get a large chicken for only €4.79 and they're the tastiest, moistest birds I've eaten in a long time.

    So you could roast one of those and use the breast meat, shredded, in soups for example.

    Fry a chopped onion, crushed garlic and diced vegetables, such as carrots, peppers, celery, until soft. Add some vegetable stock and then throw in the chicken. Doing this will ensure your meat is so soft and melt-in-the-mouth.

    You could have this soup for lunch.
    Or have a mixed salad with the chicken; throw in hard boiled eggs, peppers, cucumber, rocket, lettuce, red onion, sweetcorn, gherkin, tomato, etc, the list is endless.

    You can do the same thing with a ham fillet; cook it Sunday and use it in salads, soups for the rest of the week.

    You could also try a jacket potato; bring one pre-cooked and wrapped in foil, and take some boxes of fillings, like tuna or beans or leftover bolognese/chilli.

    Wholemeal wraps or wholegrain bread are good; I love Brennan's Be Good Wholegrain Bread; it's 60cals a slice but the reason I buy it is because it's not that big thick dense brown bread you normally see.
    It's light in texture.

    Snacks; I like Greek yogurt with walnuts, berries and a drizzle of honey, but you could take any fruits, or some unsalted nuts, perhaps a little lunchbox of a variety of snacks, such as dried fruit, small portions of cheese, maybe some leftover meat as I mentioned earlier, small bag of popcorn or some dark chocolate.
    You could have some "in juice" pots of fruit too, such as chopped pineapple and mango.

    Cold hard-boiled eggs are good too!

    I love getting up early and get a proper breakfast and i also sometimes make lunch in the mornings. I love making omelettes for lunch. Throw in anything i've got, cheese, tomato, mushrooms, sweet potato. Not all those together, depends what i've got. But it doesn't take up much time at all.
