    After 20 years in Bar and Food industry work I bit the bullet and trained in a Level 5 Proffesional Cookery course which I gained a distinction. I recently took up employment in one of connachts top Wedding Hotels. I can hold my own knowledge wise with the experienced chefs and I am almost upto speed. my problem is.that I didn't get The money that we discussed in the interview. I just wonder what is the rate that I should expect. Also should I have signed a contract

    Yes you should have gotten a contract. No idea on rates though
